Fiesta Turkey Soup
This is a favorite around our house, and super easy to make, so I thought I’d share it with everyone.
Fiesta Turkey Soup
1 medium onion, diced
1 teaspoon vegetable oil
1 garlic clove, minced
3 cups chopped, cooked turkey or chicken (I use ground turkey in most cases and it works great)
1 (15 oz) can chili beans
3.5 cups chicken or turkey broth
1 (11 oz) can whole corn with red and green peppers, drained
1 (10 oz) can diced tomatoes and green chiles
1/2 teaspoon of chili powder
1/2 teaspoon ground cumin
salt & pepper to taste
Toppings: sour cream, shredded Mexican cheese blend

Saute onion in hot oil over medium heat (and wear sunglasses, because that onion always makes me cry!) 7 minutes or until tender. Add garlic, and saute 1 minute. Stir in turkey and next 8 ingredients (told you it was easy, you basically dump it all in and cook!). Bring to a boil, stirring occasionally. Reduce heat and simmer 15 minutes. Serve with desired toppings.
I tend to make this early in the week so if we’ve got a busy day and just no time to come up with dinner, I’ve got it on hand. It’s also chunky enough to be enjoyed by toddlers who haven’t yet mastered the idea of a spoon. If you have an older toddler, this is a great recipe to let them help with, ie, letting them stand on a stool and just dump each can in the pot. NEVER leave your child near a stove that’s on without very close supervision (I know you already knew that, but it bears repeating) though.
